Vicente is a dairy technician and studied to become a master cheesemaker at the Escuela Nacional de Industrias Lácteas in Madrid. He has also trained at various cheese dairies in Spain, France and Switzerland.
He has been working as a technician for thirty-five years, advising cheese dairies in the Canary Islands and producers in other countries such as India, Venezuela, Cape Verde, Argentina, Mexico, etc.
