At the age of 17, he moved to Zaragoza to study law, but 21 years later he returned to his native Canfranc with a Michelin star and a mission to make the recently opened Royal Hideaway Hotel a gastronomic reference in the area. Along the way, he left his law books behind to devote himself to his true passion: cooking.
He trained at the Escuela de Hostelería de Huesca and worked in prestigious kitchens such as Echaurren and Aponiente. In 2018, together with Ana Acín, he founded Espacio N in Esquedas. Three years later, he received his first Michelin star, which he gave up to embark on the Canfranc project, where he has been gastronomic director since mid-2021.
The Canfranc Express restaurant, located in a railway carriage at the station of this Aragonese town, opened its doors on 20 June and in just five months he has already won another Michelin star with a cuisine based on the recipes of the Aragonese valleys.
