In the heart of Montemor-o-Novo (Portugal), chef João Narigueta has succeeded in transforming Poda Restaurante into a benchmark of contemporary Alentejo gastronomy. His cuisine combines respect for local traditions with a modern approach, where each dish reflects the richness of the region’s ingredients. This same vision led him, from 2020 onward, to embark on his own path in Évora with a highly personal project: the restaurant Híbrido, recognized for its creativity and for a proposal that blends tradition and innovation.
Narigueta brings to his kitchen the authentic flavors of the land and a deep knowledge of local products. Rather than simply reinterpreting recipes, his goal is to tell the story of the territory through each dish, preserving the essence of Portuguese gastronomy while applying contemporary techniques that enhance original flavors—a philosophy that also defines the identity of Híbrido.
Before launching Poda, Narigueta gained experience in renowned Portuguese restaurants, including L’And Vineyards. His career allowed him to develop a distinctive style focused on seasonality, sustainability, and close relationships with local producers—fundamental pillars both at Poda and in his project in Évora.
