Toño Rodríguez (Jaca, 1979), trained at the Huesca School of Hospitality, has built a career defined by creativity, technique, and a deep respect for local products—qualities he proudly showcases at his own restaurant, La Era de los Nogales, located in the tiny village of Sardas (Huesca), with fewer than 40 inhabitants.
From there, Toño has revolutionized the gastronomic scene of the Aragonese Pyrenees with an emotional, bold cuisine deeply connected to the landscape and pantry of Aragón. His work has been recognized with multiple distinctions, including the title of “Best Chef of the Year 2024”, a Sol from the Guía Repsol, and his restaurant’s first Michelin star, making Sardas one of the smallest villages in the world to hold this prestigious award.
His cuisine combines technique, emotion, and profound knowledge of the territory, and his success has put one of Spain’s most remote corners firmly on the gastronomic map.
