From a young age, Beatriz Pascual learned to appreciate the freshness of local ingredients, and drawing on her family’s gastronomic heritage, she took the lead at Almazen Salinas — a bar-style restaurant concept where 15 guests surrender to the experience, enjoying a showcooking-format tasting menu.
The chef and her all-female team offer a distinctive dining experience in a former salt warehouse overlooking the Añana Salt Valley. Their goal is to pay tribute to the culinary richness of their region, with Añana salt as the central ingredient. Her cuisine blends tradition, quality, and sustainability, creating menus that celebrate local products and their history, craftsmanship, and respect for tradition.
