As part of the first generation of the Basque culinary movement, Arbelaitz continues to honor his country’s gastronomic culture.
Hilario Arbelaitz, a chef known for his elegant and refined approach to elevating the finest Basque products, which he enhances with thoughtful yet firmly grounded touches of evolution, always rooted in respect.
Over his 50-year career, Arbelaitz has received numerous awards, including the National Gastronomy Award (1991) and Best Chef of Euskadi (1993). He once held two Michelin stars (currently he holds one).
Arbelaitz began cooking alongside his mother, from whom he learned traditional Basque cuisine. Over time, he has evolved and modernized it without ever forgetting its roots. Zuberoa has been a mecca for gastronomes from around the world, with dishes and products recreated everywhere, such as the mashed potatoes or the cheesecake.
