Rosa María Medina

Rosa María Medina leads Dulcería Nublo, a small family-run bakery located in Tejeda, in the heart of Gran Canaria. From there, she keeps alive one of the island’s most representative pastry traditions: the artisanal preparation of sweets made with almonds, honey, and other ingredients closely linked to the agricultural landscape of the island’s highlands.

Her work focuses on preserving and passing on historic recipes from the municipality, especially sweets made with almonds, the emblematic fruit of Tejeda. In her bakery, products such as bienmesabe, marzipan, and other traditional specialties are prepared, all of which form part of the local gastronomic identity.
