Mediterranean and Atlantic met at the table
The incomparable natural setting of Hacienda La ReKompensa hosted an eight-handed exhibition that brought the Mediterranean and the Atlantic together at the table.
From the restaurant L'Antic Molí (Ulldecona, Tarragona), chef Vicent Guimerà served a starter of nettle, jalapeño and roasted lemon, and a main course of duck from the Ebro Delta with orange, chive pesto and almonds. And to continue on the east coast, Maria Solivellas from the Ca Na Toneta restaurant (Caimari, Mallorca) has brought to Las Palmas some tirabeques with mackerel, orange and aromatic herbs, and an octopus tartar with radish, loquat and sobrasada broth.
And two exceptional chefs have played the role of locals, with surprising proposals such as the salty cow's milk curd with a short broth of pine bark and trebolina in the first case, and sea bass in wild herb pilpil with pine caviar in the second, by the renowned Borja Marrero, master of sustainable cuisine at the Muxgo restaurant in Las Palmas. Next to him is the Venezuelan Jennise Ferrari, creator of experiences at her restaurant Qué Leche! (Las Palmas de Gran Canaria), who, after a delicious scallop tataki with sweet chilli tiger's milk and tobiko, signed for a creamy passion fruit and coconut milk dessert.
Also worth mentioning is the local wine list, which includes the fruity white Frontón de Oro, the dry Caldera and the red Malvasía barrica Las Tirajanas.
