Alejandro Hernández's cuisine is defined by classic and recognisable flavours.
From an early age, Alejandro knew that his future lay in the kitchen and studied at the Escuela de Hostelería de Salamanca. A little later, he made a trip to the Basque Country, which took him to Lasarte, where he worked hand in hand with Martín Berasategui. He became head chef at the Hotel Silken Ciudad de Vitoria, immersing himself in avant-garde and creative cuisine with a deep respect for the product, but in 2017 he returned to his hometown.
Versátil, his most personal adventure, which he shares with his brothers José (sommelier and head waiter) and David (in charge of La Bodega, the more informal area), was born out of an after-dinner conversation in Echaurren when they decided to open a restaurant in their village, Zarza de Granadilla. The result is a restaurant where they prepare a cuisine based on quality products, local cooking and traditional flavours.
