Gianni Dezio

Gianni Dezio, born in Atri (Abruzzo), has built his career around a passion for quality ingredients and family culinary traditions. As a child, he moved with his parents to Venezuela, where the family ran an Italian restaurant inspired by his grandmother. After earning a degree in Tourism Sciences in Teramo and training at the Niko Romito Academy, Dezio returned to Italy to refine his style and completed an internship with Andoni Luis Aduriz at Mugaritz in Spain.

In 2014, he opened the restaurant Tosto in Atri with his wife Daniela Trabucco, quickly establishing it as a local reference for contemporary Italian cuisine. After its closure in 2021, Dezio transformed his project into +Tosto Gastro Bottega, a more accessible space offering breakfast, lunch, and dinner outdoors, while maintaining his philosophy of quality and respect for ingredients.

His most ambitious project arrived in 2025 with Zunica 1880, located in the historic Villa Corallo in Sant’Omero (Teramo). There, Dezio develops highly technical and emotionally expressive cuisine inspired by the Abruzzo region and seasonal products, offering tasting menus that reflect his culinary philosophy. This work earned him his first Michelin Star in the Michelin Guide Italy 2026, solidifying his position as one of the most promising chefs in the region and putting Abruzzo on the international gastronomic map.

At Zunica 1880, Gianni Dezio continues to explore local tradition and innovation, while planning future projects, including a research-focused restaurant that will further expand his culinary vision.
